Dolce Paulis, a fresh sheep's milk cheese, has a sweet and tart taste with an aroma of fresh milk.


After pasteurization and inoculation of natural milk enzymes, the milk is coagulated with veal rennet.


It may be eaten after 20/60 days of maturation. Its paste is soft and white and the rind is thin, smooth and a light straw colour.
