LAIT's Pecorino Romano D.O.P is an excellent table cheese after just 5 months of maturation.


However, it is at its best after 8 months. With its unique salty taste, it is a delicious and irreplaceable side dish to Mediterranean main courses.


After thermization and inoculation with natural milk enzymes, the milk is coagulated with lamb rennet. Its paste is a creamy-white and it has a smooth rind which is either white-straw coloured or black.
