Runara, which is also produced with sheep's milk, has a straw coloured or light brown basket rind depending on consumer requirements.


After thermization and inoculation with natural milk enzymes, it is coagulated with goat rennet.


This gives the product an intense aroma and a sweet, tart flavour when it is fresh and a pleasant sharp taste when it is mature. It may be served as a part of cheese plate or grated, depending on the maturation.
