Our Pecorino Romano PDO features a hard, compact paste, white to pale straw in color, with small eyes and slight flaking.
The wheel is cylindrical with flat faces and straight sides, measuring 28-32 cm in diameter and 28-32 cm in height. The edible rind is smooth, ivory to straw-yellow in color. Each wheel weighs between 23 and 28 kg.
It has an intense aroma and a savory, aromatic flavor: slightly piquant when consumed as a table cheese after 5 months of aging; pleasantly sharp and spicy when used as a grating cheese after 8 months of maturation. An essential ingredient in many dishes of Mediterranean cuisine.
