LAIT Pecorino Sardo Maturo PDO is an aged cheese with a balanced yet versatile character, distinguished by its compact texture and pleasantly tangy flavor. Softer and more delicate in its younger versions, it develops greater structure and intensity as it matures. Made from 100% Sardinian sheep’s milk and produced in full compliance with the Protected Designation of Origin standards, it is ideal both as a table cheese and for grating, enhancing any type of culinary preparation.

Pecorino Sardo Maturo PDO

Our Pecorino Sardo Maturo PDO is an aged cheese with a white, soft, and elastic paste in younger wheels; firm, sometimes slightly grainy, in more matured ones. As aging progresses, the color turns to straw-yellow and the texture becomes compact, occasionally with small eyes. Minimum aging: 60 days.

The wheel is cylindrical with flat faces and a slightly convex side; diameter approx. 20 cm, height 10–13 cm. Smooth, firm rind of light brown color. Weight: 2.5–3 kg.

The taste is pleasantly tangy. Excellent as a table cheese and, when more matured, ideal for grating.
