Dolce Paulis – Fresh Pecorino Cheese

Dolce Paulis

Dolce Paulis is a fresh pecorino cheese with a minimum ripening of 20 days. The paste is soft, white, fragrant, with a slightly tangy flavor.

The wheel is cylindrical and smooth, with flat faces and slightly convex sides. Diameter 15–16 cm, height 7–8 cm. Weight 1.5–1.8 kg. The rind is smooth and straw-yellow.

A table cheese, perfect as an appetizer.

Prendas – Fresh Pecorino Cheese

INGREDIENTS: Sheep’s milk, salt, liquid calf rennet, lactic cultures.

Prendas

Prendas is a fresh pecorino cheese with a minimum ripening of over 20 days. The paste is soft, white, with buttery eyes, fragrant, and with a sweet, delicate taste.

The wheel is cylindrical and smooth, with flat faces and slightly convex sides. Diameter 20–21 cm, height 12–16 cm. Weight 2.8–3.5 kg. The rind is smooth and light brown.

A table cheese, excellent as an appetizer.
