Sheep’s Ricotta Gentile, Salata and Mustia
Ricotta Gentile
The Gentile Sheep’s Ricotta is made with 100% Sardinian sheep’s whey.
It comes in a truncated cone shape with a diameter of 14–20 cm and a height of 10–11 cm. Weight: 1.2–1.6 kg.
The paste is white, soft, and creamy, with a sweet flavor and aromas of fresh milk and butter.
Ricotta Salata
The Salted Sheep’s Ricotta is made with 100% Sardinian sheep’s whey. It is pressed and dry-salted on the surface.
It comes in a cylindrical shape with a diameter of 20 cm and a height of 10–12 cm. Weight: 3–3.5 kg.
The paste is white and compact, with a sweet-sour taste and a slightly salty note.
Ricotta Mustia
The Smoked Sheep’s Ricotta (Ricotta Mustia) is made with 100% Sardinian sheep’s whey.
It comes in a cylindrical shape, 20 cm in diameter, with straight sides and a height of 11–12 cm. The rind is almost absent, non-edible, and amber-colored in varying intensity. Weight: 2.5–3.5 kg.
The paste is white, soft, and creamy, with a sweet taste. The aroma recalls fresh milk and butter, enhanced by a light smoky note and a mildly savory flavour.
